Chicken, Black Bean & Sweet Potato Stew

INGREDIENTS

4 Chicken Breasts (Diced)
1 Small Onion (sliced)
1 Tin Black Beans
1 Tin Chopped Tomatoes
1 Sweet potato
1 Red pepper (chopped)
1 Tsp Cumin Powder
1 Tsp Oregano
1 Tsp hot paprika (or mild if you prefer)
1 Large handful spinach
1 Handful coriander

Fry up the onions and set aside. Add the dry herbs and spices to the pan with some EVOO and add the chicken until starting to brown. Return the onions to the plan add the beans, chopped red pepper, sweet potato and chopped tomatoes and cook with the lid on for about 15 mins or until the sweet potato is soft. Add the spinach to the pan to wilt a little. Serve with fresh coriander.
