Chickpea Cookie Dough
INGREDIENTS
65g Peanut butter smooth with salt
1 Tin drained, rinsed chickpeas
1 Tbsp vanilla extract
81g Maple syrup
58g Dark chocolate chunks or chips, ideally 60 - 69% cacao
Pinch of sea salt
20g Oats rolled regular dry uncooked

METHOD
Add all ingredients except chocolate chips to the bowl of a food processor fitted with a steel blade. Process until smooth, creamy, and completely combined.
Stop and scrape down the bowl several times as needed.
Stir in chocolate chips with a spatula, and remove.
Serve immediately, or refrigerate until ready to use.
