Blueberry and Cherry Crumble
Prawn and Kale Pasta Salad
INGREDIENTS
1 tbsp honey
80g cherry tomatoes
1 tbsp lemon juice
300g cooked king prawns
1 tablespoon extra virgin olive oil
2 tsp oregano
1/2 tbsp paprika
170g chopped kale
140g cooked pasta
1/2 block of feta cheese crumbled
1 tsp garlic powder
4 tsp greek yoghurt
1tsp dried parsley
Serves 2
METHOD

1. To make pasta salad, combine chopped kale, pasta, yogurt, lemon juice, honey, feta, cherry tomatoes, and olive oil in a large bowl.
2. Season with salt and pepper.
3. Toss the prawns in the spices and season with salt and pepper.
