Roots & Comfort Chilli

INGREDIENTS

One large red onion, [diced.](http://diced.One)

2 teaspoons of purée garlic

Olive oil

500 g of good quality mince beef

3 teaspoons Chipotle paste

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon dried oregano

1 teaspoon of tomato purée

1 tsp sugar (or you could use honey)

400 g tin of chopped tomatoes

200 mL of red wine (or water and a splash of red wine vinegar if you prefer not to use wine)

20 g of dark chocolate

Kidney beans, black beans or mixed beans whatever you have I used blackbeans

Salt & Pepper

METHOD

Add some olive oil to the pan, diced the onions and add to the pan and sauté Garlic purée the grated carrot when the character is softened add the mince beef and cooking.

Add the red wine cook until it has reduced then add all of the spices the tomato purée the beans and the chopped tomatoes lastly at the dark chocolate. Put in the oven or cook on the hob at a low temperature for the last 30 minutes. If you use an instant pot, you can also set it to slow cook and just leave it for the day until you’re ready to eat.

Serve with what rice or quinoa some fresh coriander and a dash of Tabasco if you like it a bit more spicy and maybe a dollop of mashed avocado on the top or some sour cream.
